Candied Cherry Muffins
Ingredients (for 12 muffins):
- 250g all-purpose flour
- 150g sugar (or to taste)
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 large egg
- 240ml milk
- 100g unsalted butter, melted
- 1 teaspoon vanilla extract
- 200g candied cherries, chopped (or whole if preferred)
- Zest of 1 lemon (optional for extra flavor)
- 1 tablespoon of flour (for coating the cherries)
Instructions:
Prepare the cherries:
- If the candied cherries are large, chop them into smaller pieces. To prevent the cherries from sinking to the bottom of the muffins, lightly toss them in 1 tablespoon of flour. This step helps to coat the cherries and ensures they stay evenly distributed throughout the batter.
Preheat the oven:
- Preheat your oven to 180°C (350°F). Line a muffin tin with paper liners or grease it with butter or non-stick spray.
Mix dry ingredients:
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. If using lemon zest, add it here as well.
Mix wet ingredients:
- In a separate bowl, whisk together the egg, milk, melted butter, and vanilla extract.
Combine the wet and dry ingredients:
- Pour the wet ingredients into the dry ingredients and stir gently with a spatula or spoon until just combined. Be careful not to overmix, as this can make the muffins dense.
Fold in the cherries:
- Gently fold the flour-coated candied cherries into the batter. Ensure the cherries are evenly distributed throughout the mixture.
Scoop and bake:
- Spoon the batter evenly into the muffin tin, filling each cup about 2/3 full. Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean (a few crumbs are fine, but no wet batter).
Cool and serve:
- Let the muffins cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely. Serve and enjoy!
Chef's Tips:
- For added texture, sprinkle a little sugar on top of the muffins before baking for a slightly crunchy top.
- You can replace the milk with buttermilk for a tangy flavor that complements the sweetness of the cherries.
- If you prefer, you can use other dried fruits like candied ginger or raisins for a different flavor profile.
These candied cherry muffins are soft, fluffy, and bursting with sweet, tangy flavor from the cherries. Perfect with a cup of tea or coffee, they make a delightful snack or dessert!
